I have a survival world, where i put signs on storage chests to know what item are inside. The text for the signs doesn't show up, and when you try to edit it, you cant.
After further testing, i learned that placing a new sign also doesn’t make the text show up.
In the photo below you can see 5 chests without text on the signs, even thought on them is supposed to be name for wood types, and in the 2nd photo there are supposed to be names for stuff you can order (for environment, whats a cafe without a menu?) and the text on the sign doesnt show up either, also to note the text on those signs is glowing text.
