Disappearing Inventory Items and Weird Shading On Some Mobs and Blocks

I have had this issue since 1.21.6 as well. I play on a third-party server, and after a couple minutes of playing, these changes would start to happen. Some mobs and blocks will have a visbly darker shade and the images of some inventory items will disappear. Only their durability bar will remain, and if I hover over the contents, I am still able to see the name of the item. However, once this happens, give it a couple minutes and then the inventory, health, hunger etc… bar would disappear. Then I would not be able to move or do anything in game. If I pressed ESC to leave the game, the screen would blur but I would not be able to see the game menu options.

I have tried uninstalling and installing the game multiple times. I have updated my laptop, removed the minecraft appdata folder before redownloading it and I still have this issue. I’m not really sure why this is happening…
