Copper Golems will stop looking in a chest, as if it was opened by a player, even if the player is in spectator, and the actual chest isn’t opened.
Image 1 is a chest being opened in Spectator with Golems around it idling.
Image 2 shows the Golems correctly using the chest.

Please note, that mechanics of the game may change between updates.
Things such as graphics, sounds, world creation, biomes, redstone, villagers, and animals may not work the same in current versions.
