If I put a block in my inventory, I can't remove it. Only if I take more than one block can I remove all but one! Since today, it doesn't work unless I drag it back into my inventory, but it still works with the destruction field.

Can you recreate this issue with no resource/data packs installed?
Also, if you have any mods installed, please try to reproduce this issue on an unmodified version of the game.

All I want to say is you clearly have something installed here. For one you have at least a resource pack on seeing the food creative tab icon being different. Also the way the items are being dragged is different also.
