I was shearing sheep for a bed when I realized all the sheep only dropped 1 wool per sheep.

Invalid. If you pick up the wool blocks it is actually the actual amount. (eg 3 wool blocks)
This is a feature where Minecraft will stack the same blocks/items together to reduce lag.
