In the newest snapshots, the physics of the sulfur cube behaves incorrectly compared to older snapshots likely due to the changes.
For example, 26.2 in snapshot 5, when the sulfur cube is hanging with lead on a fence, hitting the top side corner, the facing bottom corner or the distant bottom corner with the same attack value pushes the sulfur cube to the corresponding direction with similar knockback strength as shown in the video. This result does behave physically correct in these older snapshots.
But in 26.2 snapshot 6 or 7, when the sulfur cube is placed in the same condition and hit with the same attack value, hitting the top side corner will launch the sulfur cube with a far greater strength compared to the distant bottom corner, with the directional impact difference apparently diminished likely due to the massive knockback strength differences. As shown in the video, hitting higher spots creates much higher knockback compared to lower spots. This result does not behave physically correct in the newer snapshots.

Can confirm new sulfur cube physics gives unexpected and unintuitive results.
Some more detailed analysis:
Up to snapshot 5, when hitting a sulfur cube it seems the trajectory and direction was dependent on both where on its body it is hit and the vector from the center of the sulfur cube to the players position (feet). Additionally tool attack damage amplified power but that is ignored for now. This resulted in the following behaviors:
hitting the cube on the top drives it more downward or into the ground, hitting it more towards the bottom drives it in a more upwards direction. Naturally, shots hit on the bottom corner driving it diagonally upwards go the furthest.
positioning yourself further away from the sulfur cube's center results in less powerful hits compared to standing closer to the sulfur cube. Hits from below are generally less powerful because distance feet to cube center is larger.
positioning yourself higher or lower (angle) compared to cubes center hits it in more downwards and more upwards direction respectively.
In snapshot 6 and above the physics changed, likely as a result of knockback modifiers. But unlike previously, it shows some quite unexpected behavior now:
Hitting the cube more to the top/bottom still drives the cube in a more downwards/upwards angle respectively, but the power of the (diagonally) upward shot is a lot less while cubes hit downward into the ground have way more power. So hitting it downwards goes the furthest. (Video 1)
Positioning yourself closer or further away seems to not significantly influence power.
Positioning yourself lower or below the cube gives the cube up to an extremely high amount of power. It does get amplified by moving closer in horizontal distance and because of point 2 above. (Video 2)
In general these physics feel way more chaotic and less polished than in snapshot 5.
