I was trying to get specific trades from a villager and when I got it, I tried to revert the villager via breaking the job block, in this case it was the lectern, and the villager has not reverted to an unemployed villager. This has happened with other job block such as the blast furnace.

As mentioned already, the moment you trade with a villager, you lock its trades. Please verify whether you did this or not.

I could have sworn that I have in the past been able to reassign villagers after trading. Is this lock newish?
Did you already trade with the villager? Villagers lock their profession once traded with.
