for exemple this command
loot replace entity @s armor.feet loot {"pools":[{"rolls":1,"entries":[{"type":"minecraft:item","name":"minecraft:netherite_boots","functions":[{"function":"minecraft:set_enchantments","enchantments":{"minecraft:protection":4}}]}]}]}
or
/loot replace entity @s armor.feet loot {"pools":[{"rolls":1,"entries":[{"type":"minecraft:item","name":"minecraft:netherite_boots","functions":[{"function":"minecraft:set_components","components":{"minecraft:enchantments":{"protection":4}}}]}]}]}
and even
/loot give @s loot {"pools":[{"rolls":1,"entries":[{"type":"minecraft:item","name":"minecraft:stick","functions":[{"function":"minecraft:set_count","count":5}]}]}]}
provide plain netherite boots without any enchantments
and only one stick rather then 5 expected
this also work for most or all of the set functions from a snbt loot table
