Summary
When a ghast fireball either impacts an end crystal directly or explodes very nearby, the crystal either remains completely unaffected or is deleted without detonating, depending on the fireball’s impact/explosion location relative to the crystal. (/gamerule mob_griefing has no effect whatsoever.)
Steps to Reproduce
Enter a world running any version from 1.21 up to 26.3 Snapshot 9.
Place an end crystal on a block of obsidian or bedrock.
/summon minecraft:armor_stand ~ ~ ~ {NoGravity:1b,Passengers:[{id:ghast}]}Switch to survival mode and stand directly inside or behind the End Crystal's hitbox.
Observe the enemy projectiles hitting the crystal. [1]
Observed Results
The fireballs impact the crystal but deal zero damage to it, or they delete the crystal without detonating it.

I have split this report into two. This one focuses on ghast fireballs either not destroying end crystals they impact or deleting them instead of detonating them. MC-311293 tracks small fireballs (from all sources) not having any effect against end crystals.
