When changing your keybindings in the controls menu, the newly bound keys do not behave the same as the default keys. When changing the inventory key to something other than [E], the Inventory interface will not go away by repressing the assigned key, as it does with the default key. Instead the player must press [Esc] to close the interface.
When the hotbar keys are reassigned, the shortcut to swap items in your inventory to the assigned hotbar key does not work unless its using the default keys.

I have this same issue. In singleplayer mode, I reassigned the inventory button from "E" to "Tab" (and the player list button from "Tab" to "E"). I can open the inventory with Tab but can't close it, and then have to use the Esc button. I tested reassigning the inventory button to "h", and opening and closing works fine. But the "Tab" button seems to have issues with closing. This is a new issue for me with version 1.14
