In these pictures, I'm spectating as an enderman in the dark in a cave. (And the 3rd one is out of spectator mode) I have my brightness set to moody as well. As you can see, I can't see anything.

I don't really see what the problem is. The viewing as an enderman just inverts the colours. If you can't see much normally, you won't see much when it's inverted.
