If you pause the game, mobs noises, music, mobs in general, still do what they usually do if the game is not paused. Kind of weird.

Cannot confirm either.
Did you press ESC to get in the game menu or ALT-Tab to change the task ?
In the latter case you've probably pressed F3-P to switch off "pauseOnLostFocus" (see options.txt)
Please force a crash by pressing F3 + C for 10 seconds while in-game and attach the crash report ([minecraft/crash-reports/crash-<DATE>-client.txt|http://hopper.minecraft.net/help/finding-minecraft-data-folder]) here.
Everything stops for me. Cannot reproduce.
