I was playing in a world yesterday, and today, I updated to 1.7.5. When I got into my survival world, all the stuff I had yesterday (iron ore, stone tools, steak, leather armor, etc.) was gone! And by some trees I was cutting down, there was some stone on the still standing leaves. I never had stone. What is going on, Mojang!?!?

I have the same problem since updating from 14w08a. I have a copy of the save folder from before the update and can reproduce the problem.
All items, even those in chests (incl. enderchest) are gone.

The problem is that you downgraded from a 1.8 snapshot into a 1.7 version. Since the format of items changed, Minecraft didn't recognize the new format, and it deleted all the items.
Never downgrade.
