/scoreboard objectives add ~ stat.useItem.minecraft.piston_extension doesn't Work.

There is no way of testing for if you "Used" a piston extension block. The Command above doesn't work...

The piston_extension cannot be used since it's unobtainable.

um, /setblock ~ ~ ~ piston_extension? You can right-click it and it disappears! You can Use it!

Yes, but this block is not intended to be legitimally used in the game.
