Cannot use replaceitem for melon

Replaceitem allows you to place blocks and armour pieces on mobs. It does not allow you to place pumpkins.

Melons or pumpkins?
Try slot.armor.head melon_block

Works for me.

You can use melons/pumpkins only in he head slot.
