I noticed that in a LAN world (I was a client, not the server) hunger will sometimes lower then regenerate a few times and act as if full. I then attempted to eat something, and I couldn't eat it. After switching to another item within the hotbar, followed by a few seconds, the "eat" noise was played and the amount I attempted to eat was subtracted from the food stack.

I'm (or at least was) experiencing this issue at my private vanilla server, v. 1.8.2 (pre-releases) and 1.8.3.
Description: It occurred only in the Nether, at least for us. Suddenly I saw regeneration effect at my hunger bar. It is not instant, looks like regeneration effect (a little bit quicker), increasing my hunger. When it reaches full hunger, you're still able to eat - just won't see the animation or hear the sound (except that burp at the end). You can still starve to death, it just looks like graphical glitch. Otherwise, game looked and responded OK.
Other players on the server were experiencing this glitch too. I cannot reproduce it though, was unable to trigger it for 2 hours, so I will attach logs when I have them. It may be related to the server load, every time it happened there was about 3 people on the server. When it occurs, it is likely to be repeating until the player leaves the Nether.
Note: I'm using OpenJDK as JRE, version 1.7.0_75 for both server and the client.
Isn't that simply lag ? Your actions are delayed.
If that happens again, please attach the game output console of the host and provide the time of happening.
