It looks like you can block with 2 swords in F5 mode.

When not in first-person POV having a sword in each hand an blocking makes it look like your blocking with both of them.

What I expected to happen was that it would look like only one sword blocks.

What actually happened was both of them blocked.

1. Hold swords in both hands.
2. Hit F5.
3. Hold down the blocking key.
