Villagers keep disappearing when I leave a chunk. I then leave it again and come back and they reappear

Confirmed. Appears to happen when a user unloads a chunk. If you catch it quick enough, stopping and re-logging in fixes it. It seems to have to do with the village itself, though, because the iron golems that the Village spawn disappear too, but Iron Golems that you spawn don't disappear.
