I tried killing a zombie with a diamond sword in creative mode, it should've only taking 3-5 hits. It took 16!

The attack speed of weapons affects as far as I know currently also players in creative mode. You just have to wait until the attack meter is fully "charged" again
If you have it disabled, you can enable it by going to
Options...->Video Settings...->Attack Indicator
