It appears that once you enter the end, the chunks are gone/not attempting to reload and the player falls to their death. Only tested this on one world. It was, however, tested twice on this world.

I experience this today, but I don't believe it is the behaviour you described.
My end (previously generated) still existed, only I found myself entering the End at the same coordinates as the End portal in the Overworld; the middle of nowhere in the End world.
Try entering the End in creative mode and stopping yourself from dying in void. Then teleport to near origin <0,60,0> which should be near the dragon fight. See if you spot any land (may require you to fly around a bit).
Let me know if you find anything.
This is obviously still a bug though. Unlike the Nether, coordinates should not relate between the End and the Overworld. You should always enter at the same location (the obsidian platform).
Let me know if I am wrong.
Hey Adrian S, and thanks for your input!
I forgot to take mention of the coordinates of the portal, but when I went in and TP'd to 0 60 0, I was there at the end islands. Cool! 😃 While I could personally TP myself, its a bit difficult on a server, which from what I could tell, is the only place that this issue seems to persist at. (Tested on SP and had no issues)
We also, unfortunately, discovered a similar issue with the nether. Rolling back to 15w40b fixed this issue, but we had to give up those amazing boats. Haha.
It appears that it does not persist on a newly generated world.
