So the problem I am having with the minecraft 1.14.4 update isn't within the game, the install/uninstall part. Installing was no problem and it works fine for the most part. But the problem is is that I would like to uninstall the 1.14.4 update and go back to the 1.12.2 because of all the mods. But I cannot for the life of me uninstall the 1.14.4 update. I've tried deleting it from the versions, deleting everything I have in that involved 1.14.4. It does not work it keeps coming back into my files. When I got to the launch installations, not only is there not an option to pick the forge 1.12.2 option to launch with, even though I downloaded it and says its ready to be launched, I can't actually delete the forge 1.14.4 in the launch installations area. There's not an option to do so. So if anyone knows how to fix this would be greatly appreciated. I have not see anyone really talk about this issue so I was hoping someone on here would know.

Moved to the Minecraft Launcher project.
You don't need to uninstall the latest version to play an older version. You can have the older version installed while the current version is installed as well.
I'm pretty sure that the current version will always be automatically downloaded by the launcher, and that that's intended.
Okay, I do have the 1.12.2 mod downloaded, but how do I get it to where I can launch the game using the 1.12.2 update instead of the 1.14.4 update? Because I have tried every method that I know of but it just doesn't give me the option to use the 1.12.2 even though it says I can use it when launching the game. Also i am new to this and this website (so if i did something wrong i apologize) so if there is something i haven't tried feel free to tell me.
You can try creating a new installation and selecting 1.12.2-forge-<numbers> as the version. As far as I know that should work.
Please do not mark unreleased versions as affected.
