Multiple chests in various villages and ruined portals in the overworld and in Bastions in the nether have been found empty. I created another world in the previous snapshot and the problem was not found. I did some research to se if it is a recurring issue and I found out through a forum that I am not the only person this has happened to.

That is not a Minecraft Launcher issue.
