I cannot download whatever version of MInecraft on either versions of the game. When I go to “Installations” in the launcher, I have no way of choosing which version of minecraft to install. I want to install 1.21.84 but I can’t.

My friend is playing on his xbox on 1.21.84, how can I join him if I dont even have access to the same version?
You cannot choose your Bedrock version or downgrade your Bedrock version. Regarding java edition,

If you are on Windows, you can use Windows+Alt+R to open a built-in app for recording game footage.
If you are on Mac (Mojave or later), you can use Shift+Command+5 to open a built-in app for recording your screen.
