I have previously enrolled into the RTX Beta and used it. But today when launching Minecraft 10 for Windows, it loaded directly into version 1.16.40. I tried un-enrolling from the Beta, then uninstalling/re-installing and finally re-enrolling, but this did not fix the issue. I still can't access the RTX Beta.

Try the following:
On your Windows 10 launch Powershell (as Administrator) and type in the command:
Get-AppxPackage -allusers *minecraftUWP | remove-appxpackage
This will uninstall your current game and allow you to install RTX.

Same Issue here. RTX worked on 1.15,x, but after Minecraft was "updated" to 1.16 I have no RTX functionality.

I tried the 'remove-appxpackage' method and even leaving and re-joining the RTX beta, but version 1.16.3057.0 is the version getting installed after removing 1.16.40 (no beta) and this beta version does not support RTX (PFA, no menu on settings for Advance Video, nor access to RTX world templates)
