This bug occurs when you move away from more than 40 blocks from the villagers they disappear but they do not despawn if you return to the village and reload the world and they appear It also happens when a wandering trader appears, the villagers start to walk lying down while they sleep, it gave me a scare in my survival that I thought they had despawn but I saw particles and I decided to recharge the world and everything returned to normal.
