I'm a Bedrock PvP YouTuber (yes that's a real thing), so I always play in full screen with OBS in the background in case I wanna clip someone, but whenever I go to OBS, start recording, and then come back to Minecraft, it auto-disconnects me, even though I only minimized Minecraft for like 3 seconds.

That is an issue in MCPE. Java Edition can let you stay in a server while minimized (or at least until you are AFK kicked).
