After playing minecraft for a few minutes the CPU usage for the process starts going up and up until the VM crashes. I have to close the app and restart it and then I can play for a little while longer before it does it again. It is a consistent problem allowing only about 10 min or so of play each time.

Update:
I reinstalled a fresh windows 10, not upgrade, and issue still occurs.

I have a similar spread as you, and as I can confirm and if needed screenshot the freeze or CPU usage, the game floors my computer and seizes... I open task manager to check and as I expected I'm in the red...
