I'm in a single-player world. I had a pet cat that I tamed from a witch hut. A while later, it disappeared. I assume it died, but I received zero death messages. Death messages about myself dying appear fine.

I was unable to reproduce this in 1.16.201 on Android with a tamed dog and then killing it. Could you do some more testing with that scenario?
Thx for checking this. I'm wondering if the issue isn't the lack of a death message, but the disappearance without a death being involved. After the cat had disappeared, I tamed a wolf into a dog. When I went on a long journey, including crossing water by boat, the dog disappeared, as well. Several Minecraft days later, I was in a boat going back toward my journey's starting point, and I heard a dog bark. I hit F5; the dog had magically appeared in my boat. He's now safely sitting in my village. The cat has still never reappeared.

I think your pets just "disappeared" because you probably came out of the chunk they were in and didn't catch up to you in time! The chunk unloaded and like with your dog, the cat just probably waits for you in someplace that you've been before with him. By loading the chunk again you may find him, good luck!
