I just updated the app itself. It's 1.16.210.05. I've encountered this glitch on my Xbox, where I had to delete the game in order to actually get the game to load. I'm playing on a Google Pixel 4. The game worked absolutely fine before this update. Basically it's where you start up the game, get the Mojang logo then you're supposed to get the Minecraft loading screen with the loading bar, but the logo and bar doesn't load and the game will not load. No matter if you delete the data or restart the app. You gotta delete Minecraft and reinstall the game.
