Game stuttering and graphics cutting out, resolution changes, and crashes. Custom Skin bugs

I have had this issue for a while with Minecraft for Windows 10 where the game will graphically "stutter" (the game will cut out to a red screen, sometimes multiple times, before resuming to display the actual game). This never happens in the menus for the game, only when I am in-game and in servers. Sometimes these episodes result in the game entirely crashing. I have disabled and re-enabled texture packs, and tried reinstalling more than once. I am fully up-to-date with graphics drivers for my NVIDIA 1060 6GB.

I have found that using older graphics drivers and reinstalling before I start a session usually gets rid of the issue for the first session, but if I boot the game up for a second time after the first play session the stuttering starts again.

Also, since 1.17 was added in the stuttering has caused the resolution for my game to be forcefully readjusted along with game crashes.

On another side note, my custom skin has some funky stuff going on with it as well. The textures are bugged out and change every time I open my inventory. It always starts out looking like Christmas lights, and then it can do weird things like the attached red and green bars.

Any help would be much appreciated. I would usually handled this thing myself but I cannot find the logs for the game anywhere.
