A pickaxe enchanted with both Fortune and Efficiency destroys diamond ore. This results in no diamond drops as the block just gets mined away!!
You can appreciate this more than annoying.

The diamond ores aren't dropping anything because you are mining them with a gold pickaxe. You need to use an iron, diamond, or netherite pickaxe to mine diamond ores.
