Whenever I go in the nether portal and go back in the overworld it generates a new portal elsewhere.

This happens sometimes when Minecraft is unable to generate portal in matching coordinates (i.e. the place is over a lake of lava). You need to align your portals manually - there are many guides on how to do this, but basically divide Overworld portal X and Z coordinate by 8 to get proper Nether coordinates.
