After the latest bug fix (October 4th 2021, 1.17.32) my animals despawned.
I had multiple sheep, cows, pigs, chickens, dogs, cats, bees, horses and a skeleton horse (some with name tags) in my survival world and when I logged on this morning they had all despawned.
Animals and mobs in the wild are still spawning and despawning as usual
