The boat disappears when you get off of it on PE sometimes.

I have this same problem. And it kept bugging me. And then I play with my friends and sometimes when I would get off, it would be invisible but then my friends could still see it. And then if they got in the boat they would become invisible. And then if we would go out of render distance and then went to each other again we would so up. And I had my dog in one when it disappeared and I couldn’t see it but when my friend broke the boat then my dog was visible. And I have tried punching the area where it disappeared but nothing happened. I hope this helps.
