Updated to 1.18.2 and found that the villagers I had previously traded for and saved for specific enchantment books etc had somehow changed profession but kept their level. For example I had a maxed out farmer who is now a maxed out stone mason. He has a name tag and is fenced in so it is 100% the same villager. It seems every villager has changed.
