I'm uncertain on Affected Version/s however there are no Desert Temples in the games currently on Xbox One. I have gone into Creative and used the locate feature several times over the past few months hoping it would be fixed, but it hasn't yet.

It's literally every seed since 1.18 was updated, so literally load any world in 1.18 Xbox One and there are no desert temples. Other players are reporting no witches huts as well since 1.18 update.
