When trying to type in any text box with a physical keyboard, the digital xbox keyboard pops up and resets whatever was typed in the text box if typed in. Specifically, when deleting characters, the keyboard pops up and goes away after a single character is deleted in the book and quil and the keyboard pops up in the chat text and resets whatever was in there after being typed in if at all. The previous versions allowed to edit the text wherever I needed to instead of having to type in what was already there but with new text. Just very inconvenient and the book and quil is barely usable with a physical keyboard.

I use a physical keyboard and mouse myself. The behaviour of the Xbox On-Screen Keyboard is an Xbox thing. It's automatic and cannot be removed like on Android. I personally with a "Hide On-Screen" option was available, but this is not an issue Mojang can resolve.
