On the Windows 10 version of Minecraft I used the eyes of ender to find the stronghold and it took me nowhere. I dug around the whole area and there was nothing. I also tried on another world to see if it was just that one world and it wasn't. I saw someone else saying they have had this problem too. I don't know if it is just with bedrock or Java too, but it would be nice if this was fixed so I don't have to spend hours finding another stronghold without the eyes of ender, assuming there still are the strongholds.

Yes, there was a village over where the eye of ender led. Also, I made a creative world with the same seed (881933772366581497) and there was still no stronghold. The coordinates in which the eye led me in both the survival and creative versions of the world was 1729, 31, -2526.
I have tried with the same seed value and was able to correctly find the end gate at coordinates: 1740, -37, -2510.
The ender eye only points to the approximate planar coordinates of the stronghold, and the actual y-coordinate location of the stronghold is indeterminate, ranging from deep underground to near the surface. You need to search the surrounding area carefully.
I see what you mean now and I tested it on a different world too. The eyes of enders don't do what they used to and take you necessarily inside the stronghold, but they lead either above or below it now usually. The same with the /locate command. It takes you higher or lower than the stronghold, but it is still in that general area.
Was there a village where the Eye of Ender led you to? If not, then the chunks were likely generated in a previous version and you may need to go to a new place in the world and use the Eye of Ender again to find a nearby stronghold.
Alternatively, is there a stronghold at the corresponding coordinates in a new (creative) world using the same seed?
