When adding an attachable file, that changes the model and texture of the held item, to the snowball, ender pearl, and egg it affects the projectlie and not the item in hand. When coding the attachable differently it does add the custom item model, but the original item is visible.
The attachable was added using a resource pack.
To replicate this, you need a resource pack that adds an attachable to the snowball, ender pearl, or egg item that gives it a custom model when held.
The issue may be caused by the listed items' identifiers being the same as their entity projectile counterpart.

Here's the resource pack where I discovered this issue.
MPCE-170972 does not describe my issue as I'm not adding custom items, but editing existing items.
This applies to all items that have an entity counterpart that uses the same identifier.
(Example: pufferfish, armors, (raw) chicken, etc)
The "item" can be defined in the attachable file with a custom identifier to render the attachable model, but there is no way to remove the default item sprite from rendering as well. (See image)
[media]Also happens to minecraft:chicken, minecraft:cod, minecraft:salmon, minecraft:pufferfish and minecraft:rabbit. Seems like they don't work because they share same namespace with entities

Please note, that mechanics of the game may change between updates.
Things such as graphics, sounds, world creation, biomes, redstone, villagers, and animals may not work the same in current versions.
