A mob picked up my stuff I turned it to peaceful and all of my hard earned armor and sword was gone.

When a mob picks up armor or sword if you put the difficulty to peaceful it will get rid of your armor and sword

However, this issue is Working as Intended.
The report you have submitted is working as intended: Mobs do not drop their equipped items when despawning. In order do retrieve items picked up by a Mob you need to either kill it or give it more valuable items of the same type.
Please note, that mechanics of the game may change between updates.
Things such as graphics, sounds, world creation, biomes, redstone, villagers, and animals may not work the same in current versions.
