Steps to Reproduce:
In Settings > Video, turn off Hide Paper Doll and set the UI Profile to Classic
In Settings > Touch, turn on "Customize Controls (Experimental)"
Close the Settings menu and then run, sneak, crawl, or ride minecarts and horses
Observed Results:
The paper doll doesn't show.
Expected Results:
The paper doll should show.
Notes:
A touch device is not needed to reproduce this, as you can turn on the Customize Controls option on a PC.
