My girlfriend and I are both on the cusp of getting all 125 achievements in Minecraft. She has 121/125, and she requires "Sail the Seven Seas", I have done EVERYTHING I could possibly do to help her and nothing works. She has swam to the bottom of every ocean, we have boated above every ocean, too. The lack of tracking doesn't make it much easier, either. I'm not sure if we are missing something, but as far as "Visit all Oceam Biomes" goes, we have done that.
