I attempted it again, and nothing happened every time I press START it automatically switches back like I never pushed it.

The Connected User Experiences and Telemetry service must be enabled to unlock achievements. I'm not sure why the service isn't starting for you, but this isn't an issue with Minecraft, so I am resolving this ticket as Invalid.

You can try creating a thread on the Microsoft forums and see if anyone there can help you.
