I saw on YouTube there was an update about pigs with 3 different color variants in the taiga and savanna biomes and there was also an update about leaves falling on every tree, but in my Minecraft none of that was there and I checked on the Play Store and it wasn't there. Update please Mojang, is there really no update for MCPE or is this a bug?

To access the new pigs you need the beta / preview version.
If you choose to use that, be sure to make backups of your worlds before opening them.
You are on the wrong update. The new pigs are only released on 1.21.60.25 Preview as yet, and not in the 1.21.51 Hotfix, as it is part of a new update.
