Pink textures glitch on Nintendo Switch

So, ever since the 1.21.62 update, weird glitches with entity and player models have been occurring. This glitch turned them pink. I have tried deleting cash, moving to a different network and signing in and out of the game - none of it worked. I have provided images below of the gameplay.
