I bought maps for trial chambers from a villager and when I went to the indicated locations the structure was not there or had been replaced by another one

We do not have enough information to reproduce this issue.
Note that if the world was created before trial chambers existed, already-generated chunks will not be updated, so you would have to explore in new areas. You might want to verify this by creating a new world with the same seed to see if there is a trial chamber where the map said it would be.

Note: made a copy of the world and used spectator mode to see if they are nearby or if i just missed them but doing that two times i only found caves and other structures with no relate to the trial Chambers
