There is a strange issue where if download a update and wait to import what did downloaded the update you will encounter a change of icon and build number for some moments when finish to import all update was introduced will return normal when finish the import of the update, but this does every new update:
Steps to reproduce this issue:
Click +
Go to update section
Then click search updates if there is
If there no new update, you will need wait, if there is update can go further with this steps.
Wait until importing the update you will encounter the icon and the build number will be changed for a moment and after update it will return with icon normal and with number build the new version.

Since this occurs in the Switch menu, it is an issue with the Switch, not with Minecraft.
