I can’t be sneak attacked unless someone cheats. This issue also occurs on the old console edition and on Java. I once died in Minecraft hardcore mode because of this. It appears to affect the mobs listed below,
Skeletons and Ice Skeletons,
Zombies and Zombie Villagers,
Ravagers and Pillagers,
Spiders,
Witches,
and probably more mobs.
