Summary:
When breaking many blocks in Minecraft (Survival), the stats eventually stop updating. My "Blocks Broken" and "Mobs Defeated" stats are stuck, even though I have broken thousands of blocks and defeated dozens of mobs. The "Time Played" stat seems to be working normally. I’m unsure if my "Distance Traveled" stats are stuck or just take longer to update. These stats seemed to be working a few days ago. I will update this report in a few days after I confirm whether they are stuck.

How to reproduce:
Create a Survival world.
Get many, many tools.
Start breaking a huge number of blocks.
This seems to be how I triggered the bug. It could be that massive updates to the stats system break it. "Blocks Broken", "Mobs Defeated", and "Distance Traveled" are all stats that can be increased very rapidly by player actions, possibly beyond what the stat tracking system is designed for. In contrast, "Time Played" cannot be increased massively in a short time, which could explain why that one still works for me.
Observed behavior:
Stats get stuck seemingly without reason. However, this could be due to the system receiving massive updates all at once, which causes the stats to break or stop updating.
Expected behavior:
Stats should not get stuck. They should update after a few seconds or minutes, not stay frozen for days, weeks, or even indefinitely.

This is not a duplicate of MCPE-189154 , but that issue could be a result of the bug I’m describing here.
On PlayStation, I also broke many blocks. When I went to check the stats, I noticed they weren't updating either. I don’t know whether the stats on PlayStation were updating before I broke many blocks. At this point in time, even the "Time Played" stat no longer works on PlayStation.
So while MCPE-189154 describes stats not working on PlayStation, this report describes a potential root cause for all platforms: that stats get stuck after being updated massively.

Nope, it was set to “Stopped.” After activating it, the stats work just fine. This bug report can be closed as invalid.
Do you have the “Connected User Experiences and Telemetry” service running? To check:
Press the Windows key + R and type services.msc
Find the “Connected User Experiences and Telemetry” service
Check if the service says “Running” in the Status column. If it does not, right click on the service and click on “Properties”
Click on the “Start” button and then set “Startup type” to Automatic
Click on the “Apply” button and then the “OK” button
