The Inception Xboxachievement which requires you to "Push a piston with a piston, then pull the original piston with that piston."
I've done this multiple times on multiple and versions devices, tested on dummies as well. No version or device seems to be unlocking the achievement. I had friends with the same issue. Also read on different places like trueachievements that people are having the same issue.
Besides, Artificial selection (breed a mule from a donkey and a horse) seems to be bugged now.

Affected versions:
Seems organizational wizard works on Apple TV, Gear VR and windows 10 PC, does not work on others. So I got that going only works on windows 10 PC. The other 3 seem to be not working on any device, though I've only tried android, Ios, apple tv and windows 10.

I can confirm I'm having the same issue, exactly as described.
Multiple achievements are not unlocking on multiple devices.
I am now on version 1.1.2
Platform Windows 10 / Realm (belonging to my friend)
I am having exactly the same problem too with both the "Inception" and "Artificial Selection" achievements since i tried to achieve them from 1.1.055. bred 3 mules now and nothing, just tried to push and pull again and nothing (Video attached of this attempt).
